These soft cottage cheese dumplings are light, tender, and comforting. Made with simple ingredients, they are shaped with a spoon and gently simmered until cooked through. Serve them warm with fruit or marmalade and buttery toasted breadcrumbs. For a savoury version, leave out the sugar and vanilla, then serve them as a side dish or add them to a creamy soup.

Instructions
1. Heat the Water
Fill a medium-sized pot with water, leaving enough room for the dumplings. Cover and bring to a boil while you prepare the dough. Add salt to the water.
2. Blend the Cottage Cheese

Put the cottage cheese into a mixing bowl. Add the sugar and a pinch of salt, then blend with a hand blender until creamy and free of large lumps.
3. Add the Eggs and Vanilla
Add the eggs and vanilla sugar. Mix again until everything is well combined.
4. Mix in the Flour
Place the bowl directly on a kitchen scale, set it to zero, and add the flour. Mix just until combined. The dough should be soft and slightly sticky. Avoid adding extra flour just to make shaping easier, as this can make the dumplings heavy.
5. Shape with a Spoon

Reduce the water to a gentle simmer. Take a spoonful of dough. Lightly tap the spoon against the inside of the bowl to release the dough back into it, then scoop it up again. Repeat if needed to create a rounded shape. Gently slide the dumpling into the water. Continue with about half the dough, keeping the dumplings similar in size.
6. Cook the dumplings
Bring the water back to a gentle simmer. Cook for approximately 5–6 minutes, depending on the size of the dumplings. They will rise towards the surface as they cook, but floating alone does not mean they are ready. Check one dumpling before draining: the centre should be set, with no raw dough.
7. Toast the Breadcrumbs
While the dumplings cook, melt the butter in a small pan over low to medium-low heat. Add the breadcrumbs and stir until golden. Watch closely as they brown, then remove the pan from the heat.
9. Plate and Serve

Spread a spoonful of prune marmalade across each plate. Divide the dumplings between the five servings and spoon over the toasted breadcrumbs and butter. Garnish with fresh mint if you like, and serve warm.
