Creamy Roasted Pumpkin Soup with Crispy Parmesan Crumble

This creamy roasted pumpkin soup is an easy way to turn a Hokkaido pumpkin into a comforting, flavourful meal. Roasting first brings out the pumpkin’s natural sweetness, while onion, carrot, leek, garlic and potato build a satisfying soup base without store-bought vegetable stock.

What makes it special is the contrast: silky soup, a golden Parmesan crumble, lightly toasted pumpkin seeds and a small finish of cream. There is no cream blended into the soup itself — the potato and pumpkin provide the creamy texture.

Vasko’s Tips

Use Hokkaido pumpkin if you want to leave the skin on; wash and scrub it thoroughly before roasting.
Cut the wedges crosswise into flatter triangles. Raised pointy ends can burn before the rest of the pumpkin softens.
Season the pumpkin directly on the lined tray to save washing another bowl.
Add onion, then carrot, leek and garlic in that order; garlic is best added last because it burns quickly.
Use a modest amount of soup-base vegetables so they complement rather than overpower the pumpkin.
Pulse the crumble only until sandy and crumbly. Cold butter helps create a crisp texture.
Watch the Parmesan crumble closely in the oven; remove it once golden even if the pumpkin needs more time.
If the blended soup is thick, add water gradually. It is easier to thin the soup than thicken it again.
If using already roasted and salted pumpkin seeds, toast only briefly, then crush lightly in a mortar.
Add the crumble just before serving so it stays crisp. The recipe makes more crumble than you need for four bowls.
The soup is creamy without added cream in the pot; a small amount of cream is used only for decoration.

Instructions

1. Wash the pumpkin

Scrub the Hokkaido pumpkin thoroughly under running water with a clean sponge reserved for food. Its skin is edible and softens when roasted, so there is no need to peel it.

2. Remove the seeds and cut into flat wedges

Carefully halve the pumpkin, scoop out the seeds and stringy centre, and cut it into wedges. Slice each wedge crosswise into smaller, flatter triangles. These lie flat on the tray so pointed ends are less likely to burn.

3. Season and roast

Arrange the pumpkin on a parchment-lined baking tray. Season directly on the tray with salt, freshly ground black pepper and a drizzle of olive oil; toss to coat. Roast at 170°C / 340°F for a little over 30 minutes, until tender and lightly browned. Oven time will depend on the size of the pieces.

4. Start the soup base, one vegetable at a time

While the pumpkin roasts, warm a little olive oil in a large pot over medium heat. Peel and chop the small onion and start cooking it gently. Next, prepare and add the small carrot; then wash and slice a little leek and add it. Finally, chop and add the garlic. Sauté the vegetables gently without over-browning. Use small amounts so the pumpkin remains the main flavour.

5. Add the potatoes and simmer

Peel two medium potatoes, slice them thinly and add to the pot. Pour in just enough water to cover the vegetables and season lightly with salt. Simmer until the potatoes are soft.

6. Make the Parmesan crumble

Finely grate 80 g Parmesan. Add it to a food processor with 140 g plain flour and 80 g cold, cubed butter. Pulse briefly until crumbly, not into a smooth dough. Scatter onto a parchment-lined baking tray, breaking up large lumps with your fingers.

7. Bake the crumble

When the pumpkin is nearing the end of roasting, place the crumble tray on the upper oven rack. Bake until lightly golden and crisp, checking after approximately 8–10 minutes. Remove as soon as it is ready so the Parmesan does not burn; the crumble may be ready before the pumpkin.

8. Combine the roasted pumpkin and soup base

Check that the roasted pumpkin is soft enough to pierce easily with a fork. Add it, including its tender skin, to the pot with the cooked potatoes and vegetables. Simmer together for a few minutes to blend the flavours.

9. Warm and crush the pumpkin seeds

Briefly warm the already roasted, salted pumpkin seeds in a dry frying pan over gentle heat, shaking the pan so they do not burn. Tip them into a mortar and crush lightly, leaving some texture.

10. Blend and adjust

Take the pot off the heat and carefully blend the soup until completely smooth with an immersion blender. If it is too thick, add water a little at a time, stirring and checking the consistency. Taste and adjust the salt and pepper as needed.

11. Plate and serve

Ladle two generous ladles of soup into each bowl. Place a spoonful of crispy Parmesan crumble to one side, add a small semicircle of cream and finish with lightly crushed pumpkin seeds. Serve warm. You will probably have Parmesan crumble left over; store it separately to keep it crisp.
